We got a fantastic risotto kit for Christmas from my aunt and this was the main attraction for tea!


Here is what we did….
Soak 2 oz of dried porcini mushrooms rehydrated in 1 litre of hot water for 20 mins, then drain in a bowl saving the mushroom juice except the last bit which has the bits in!!! Then crumble a stock cube into it.
Then cook pack of fresh mushroom with some onion and garlic.  Fry gently and cook until softened.  Add the porcini mushrooms and  arborio rice and stir in with some white wine.  
Pour in some of the mushroom/stock juice and let it simmer until the rice absorbs it, then add some more and keep doing that until the rice is nice and plump! I like to add some parmesan cheese to finish. Voila!!
